Healthy Bananabread Recipe with Kakaw Spirit Earth Blend
This healthy banana bread is the ideal snack: sweet, nutritious and responsible! Thanks to the combination of ripe bananas, buckwheat flour and the rich taste of the Kakaw Spirit Earth Blend, you not only get a deliciously moist banana bread, but also a boost of healthy ingredients. Perfect for every day!
Ingredients (for 1 cake):
- 4 ripe bananas
- 3 eggs
- 150 g buckwheat flour
- 70 g soaked dates (pitted)
- 2 tsp baking powder
- 30 gr Kakaw Spirit Earth Blend
- 75 g mixed nuts (e.g. walnuts, hazelnuts, almonds)
- 30 g coconut flakes
- pinch of salt
Materials:
- Cake tin (25 cm)
- Baking paper
Preparation method:
- Preheat the oven to 175 °C (top and bottom heat).
- Puree the ripe bananas together with the soaked dates (pitted) into a smooth mixture using a hand blender in a bowl.
- Add the eggs and mix well through the banana-date mixture.
- Fold the buckwheat flour, baking powder and a pinch of salt into the batter.
- Add the Kakaw Spirit Earth Blend and mix well into the mixture.
- Chop the mixed nuts coarsely and fold them into the batter.
- Finally, fold in the grated coconut.
- Line the outside of the cake tin with baking paper and place the batter in the tin.
- Bake the banana bread in the preheated oven for about 45 minutes, or until a skewer inserted into the center of the cake comes out clean and dry.
- Let the banana bread cool slightly in the pan before transferring it to a wire rack to cool completely.
- Store the banana bread wrapped in aluminum foil outside the refrigerator for up to 5 days. You can also store it in the freezer for a longer shelf life!
Tip from Anouk: Cut the banana bread into slices and freeze them. That way you always have a delicious, fresh slice of banana bread at hand!
